Coconut Vegan Pancakes

Hello friends! This is one of my favorite vegan recipes. I'm all about making delicious food with simple steps to follow. If your vegan or not this is a great breakfast to try out, and it seriously cannot get more easier than this recipe.

♥ ½ cup of milk ♥ ¼ cup coconut flour ♥ 1 teaspoon vanilla ♥ ½ teaspoon baking powder ♥ 1/8 teaspoon salt ♥ 1/8 teaspoon cinnamon ♥ 2 packets of “Raw Stevia”sweetener ♥ Log Cabin Sugar Free Maple Syrup
Instructions
1. Combine all ingredients together in a medium sized bowl. 2. Mix until there is no lumps and the batter is smooth. (If the consistency is too thick, add a bit more of milk until you have the consistency you like.)
3. Heat a nonstick skillet over medium high heat.
4. Spread some coconut oil or a tad bit of butter on the heated skillet to avoid the pancakes from sticking to the pan.
5. When the pan is hot, pour ¼ cup of pancake batter into the pan and cook until the sides are golden and the top is bubbling. (by now your house should have a delicious pancake aroma)
6. When you are done cooking both sides, transfer the pancakes to a plate and repeat the steps 4-5 with the remaining batter.
7. Top with some fruits and coconut flakes. (optional) This is a great recipe to share with friends and family. Hope you enjoyed!
