Garden Penne Pasta

Friday, September 04, 2015

This recipe is the one recipe that brings me back home. My grand mum's family favorite veggie penne pasta. It's easy, delightful, and a perfect dish to make for any last minute visits. I call these type of recipes a "one pot wonder". I also cooked this for my first YouTube video.

 Carrots 3/4 cup
  Salt
  Green beans 3/4 cup
 2 Garlic cloves
 Peas 3/4 cup
 Red onion 1/4 cup
1 tbps Yellow Chilli Paste
♥ 2-3 tbsp Canola oil

Intructions
  1. Cook the pasta as instructed on the box
  2. Heat a pan and add canola oil; toss in your cubed potatoes and let it fry until it's golden on all sides. (optional)
  3. Set the potatoes and pasta aside once they are done cooking
  4. Heat a pan and add olive oil; toss in the garlic and onion until it is golden.
  5. Add in the carrots, green beans, peas, yellow chili, cabbage and red peppers. (Optional: mint, this is my nan's secret weapon to avoid an overpowered taste of veggies)
  6. Lower the heat to medium/low and let all the vegetables steam. (I left it steaming for 10 minutes, but my cooking equipment might be different then yours, so the time differs)
  7. Mix the fried cubed potatoes, pasta, and veggies in a bowl and you are finished, Enjoy!
