Garden Penne Pasta

This recipe is the one recipe that brings me back home. My grand mum's family favorite veggie penne pasta. It's easy, delightful, and a perfect dish to make for any last minute visits. I call these type of recipes a "one pot wonder". I also cooked this for my first YouTube video.

Ingredients
♥Penne Pasta (box Instructions)
♥ 1 cup Cabbage
♥ 1 Potatoe (optional)
♥ 1/2 cup Parmesan cheese
♥ 2 tbsp Olive oil
♥ 1 Red pepper
♥ Carrots 3/4 cup
♥ Salt
♥ Green beans 3/4 cup
♥ 2 Garlic cloves
♥ Peas 3/4 cup
♥ Red onion 1/4 cup
♥ 1 tbps Yellow Chilli Paste
♥ 2-3 tbsp Canola oil
Intructions
- Cook the pasta as instructed on the box
- Heat a pan and add canola oil; toss in your cubed potatoes and let it fry until it's golden on all sides. (optional)
- Set the potatoes and pasta aside once they are done cooking
- Heat a pan and add olive oil; toss in the garlic and onion until it is golden.
- Add in the carrots, green beans, peas, yellow chili, cabbage and red peppers. (Optional: mint, this is my nan's secret weapon to avoid an overpowered taste of veggies)
- Lower the heat to medium/low and let all the vegetables steam. (I left it steaming for 10 minutes, but my cooking equipment might be different then yours, so the time differs)
- Mix the fried cubed potatoes, pasta, and veggies in a bowl and you are finished, Enjoy!
